  • 1 cup (227g) unsalted butter, melted and slightly cooled
  • 1 ¼ cups (250g) packed brown sugar
  • ½ cup (100g) granulated sugar
  • 2 large eggs, room temperature
  • 2 teaspoons pure vanilla extract
  • 1 ½ cups (270g) semi-sweet chocolate chips
  • 1 cup (150g) dried tart cherries, chopped if large

Instructions

  1. Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone mats.
  2. In a large bowl, whisk together the flour, baking soda, and salt. Set aside.
  3. In a separate bowl, mix melted butter with brown sugar and granulated sugar until smooth and glossy.
  4. Beat in eggs one at a time, then add vanilla extract. Mix until smooth and shiny.
  5. Slowly add the dry ingredients to the wet ingredients, stirring gently until just combined. Do not overmix.
  6. Fold in chocolate chips and dried cherries evenly.
  7. Drop dough by cookie scoop or tablespoon onto prepared baking sheets about 2 inches apart.
  8. Bake for 10-12 minutes until edges are set but centers are still soft.
  9. Cool on baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

Notes

Chill dough for 15-20 minutes if cookies spread too much. Use room temperature eggs to avoid lumpy batter. Pull cookies out just before fully set in center for chewy texture. Rotate baking sheets halfway through baking for even cooking. Dough can be refrigerated up to 24 hours for deeper flavor.
