Ingredients

Scale
  • Frozen thick-cut fries (about 4 cups) or homemade fries (5 large russet potatoes, peeled and cut)
  • Vegetable oil or avocado oil (for frying or roasting)
  • Salt and black pepper (to taste)
  • 1 lb ground beef (preferably 80/20 for juiciness)
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 (14 oz) can diced tomatoes
  • 1 (8 oz) can tomato sauce
  • 1 (15 oz) can kidney beans, drained and rinsed
  • 2 tbsp chili powder (adjust to taste)
  • 1 tsp ground cumin
  • 1/2 tsp smoked paprika
  • 1/4 tsp cayenne pepper (optional)
  • Salt and pepper (to taste)
  • 2 cups shredded sharp cheddar cheese
  • 1/2 cup sour cream
  • 2 green onions, thinly sliced
  • 1/4 cup pickled jalapeños, sliced (optional)
  • Fresh cilantro leaves (for garnish)

Instructions

  1. Prepare the Fries: If using frozen fries, spread evenly on a baking sheet and bake at 425°F for 20-25 minutes, turning halfway, until golden and crisp. If making homemade fries, peel and cut potatoes into thick strips, soak in cold water for 30 minutes, dry thoroughly, toss with 2 tbsp vegetable oil, salt, and pepper, arrange in a single layer on a baking sheet and roast at 425°F for 35-40 minutes, flipping halfway through.
  2. Cook the Chili: Heat 1 tbsp oil in a large skillet over medium-high heat. Add chopped onions and sauté for 3-4 minutes until softened. Add minced garlic and cook for 30 seconds, stirring constantly. Add ground beef and cook until browned, breaking it up with a spoon (about 6-8 minutes). Drain excess fat if needed, then stir in chili powder, cumin, smoked paprika, cayenne, salt, and pepper. Add diced tomatoes, tomato sauce, and kidney beans. Stir to combine. Reduce heat to low, cover, and simmer …
  3. Assemble the Chili Cheese Fries Supreme: Arrange hot fries on a serving platter or individual plates. Evenly spoon warm chili over the fries. Sprinkle shredded cheddar cheese generously on top. Pop under a broiler or into a hot oven (about 400°F) for 3-5 minutes until cheese melts and bubbles. Remove from oven carefully, then top with dollops of sour cream, sliced green onions, jalapeños, and fresh cilantro leaves.
  4. Serve Immediately: Enjoy right away while everything’s warm, gooey, and crispy.

Notes

Soak homemade potatoes in cold water for 30 minutes to remove starch and improve crispiness. Avoid overcrowding the pan when roasting fries or browning beef to ensure even cooking. Use sharp cheddar cheese for best melt and flavor. Watch cheese closely under the broiler to prevent burning. For vegan or vegetarian versions, substitute ground beef with lentils or plant-based crumbles and use dairy-free cheese and sour cream. Reheat fries in oven or air fryer to restore crispiness if using leftovers.
