  • 1 teaspoon vanilla extract
  • 1 cup (125g) peeled and finely chopped apples (Granny Smith or Honeycrisp)
  • ½ cup (100g) granulated sugar (for spiced cinnamon sugar crust)
  • 1 tablespoon ground cinnamon (for spiced cinnamon sugar crust)
  • 2 tablespoons unsalted butter, melted (for spiced cinnamon sugar crust)

Instructions

  1. Preheat oven to 375°F (190°C) and line muffin tin with liners or grease well.
  2. In a large bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  3. In a separate bowl, beat sugar with melted butter until smooth. Add eggs one at a time, beating well after each.
  4. Stir in apple cider and vanilla extract.
  5. Pour wet ingredients into dry ingredients and gently fold with a spatula just until combined.
  6. Fold in chopped apples gently.
  7. Divide batter evenly into 12 muffin cups, filling about ¾ full.
  8. Bake for 18-22 minutes, checking at 18 minutes with a toothpick for doneness.
