  • Cinnamon streusel topping:
  • ¼ cup (22g) rolled oats
  • 2 tablespoons (25g) brown sugar
  • 2 tablespoons (15g) flour (all-purpose or gluten-free blend)
  • 2 tablespoons (28g) cold cubed butter (or coconut oil for dairy-free)
  • ½ teaspoon ground cinnamon

Instructions

  1. In a large bowl, combine 1 cup rolled oats, 1 cup milk, ½ cup Greek yogurt, 2 tablespoons maple syrup, 1 teaspoon cinnamon, 1 teaspoon vanilla extract, and 1 teaspoon lemon juice. Whisk until fully blended (about 3 minutes).
  2. Peel and dice 1 medium apple into small cubes (about ½-inch pieces). Fold gently into the oat mixture (about 5 minutes).
  3. In a small bowl, mix ¼ cup rolled oats, 2 tablespoons brown sugar, 2 tablespoons flour, and ½ teaspoon cinnamon. Add 2 tablespoons cold cubed butter and rub into dry ingredients with fingers or pastry cutter until mixture resembles coarse crumbs (about 5 minutes).
  4. Spoon the oat mixture into glass jars or containers, filling each about ¾ full. Sprinkle a generous layer of cinnamon streusel topping on each jar.
  5. Cover jars tightly and refrigerate for at least 6 hours or overnight.
  6. In the morning, stir oats gently if desired or enjoy as-is. Optionally top with extra fresh apple slices or a drizzle of maple syrup.
