  • 1 medium head green cabbage (about 1.5 pounds), shredded or chopped
  • 1 large yellow onion, finely diced
  • 3 garlic cloves, minced
  • 15 oz can tomato sauce
  • 14.5 oz can diced tomatoes, undrained
  • 4 cups beef broth
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon Worcestershire sauce (optional)
  • Salt and freshly ground black pepper, to taste
  • 2 tablespoons olive oil
  • 2 bay leaves
  • Red pepper flakes (a pinch, optional)
  • Fresh parsley for garnish (optional)

Instructions

  1. Prepare your ingredients: finely dice the onion, mince the garlic, and shred the cabbage into bite-sized pieces. (Time: 10 minutes)
  2. Heat 2 tablespoons of olive oil in a large Dutch oven or heavy-bottomed pot over medium-high heat. Add the ground beef and cook, breaking it up with a wooden spoon, until browned and no pink remains, about 6-8 minutes. Drain excess fat if needed.
  3. Push the beef to one side of the pot, add diced onions, and sauté until translucent, about 4-5 minutes. Add minced garlic and cook for another 1 minute until fragrant.
  4. Stir in the shredded cabbage, mixing well with the beef and onions. Cook for 5 minutes, stirring occasionally, until cabbage begins to soften but still holds some crunch.
  5. Add tomato sauce, diced tomatoes with their juice, beef broth, apple cider vinegar, Worcestershire sauce, bay leaves, salt, and pepper. Stir to combine.
  6. Bring the mixture to a boil, then reduce heat to low and cover with a lid. Let simmer gently for 30 minutes, stirring occasionally.
  7. After simmering, taste the soup and adjust salt, pepper, or vinegar if desired. Remove bay leaves before serving.
  8. Ladle into bowls and garnish with fresh parsley or red pepper flakes if desired. Serve warm.

Notes

Drain excess fat after browning beef to avoid greasy broth. Add vinegar towards the end to balance acidity. Simmer gently to keep cabbage texture. Soup flavors improve after sitting overnight. Can be frozen up to 3 months.
