Instructions

  1. Melt 2 tablespoons of butter in a large pot over medium heat. Add chopped onion, garlic, carrots, and celery. Sauté until veggies are softened and fragrant, about 5-7 minutes.
  2. Pour in 6 cups of chicken broth. Stir in dried thyme, parsley, salt, and pepper. Bring mixture to a gentle boil.
  3. Stir in shredded chicken and reduce heat to low. Let simmer gently while preparing dumplings.
  4. In a mixing bowl, whisk together flour, baking powder, and salt. Add milk and melted butter, stirring just until combined. Batter should be thick but spoonable.
