A comforting and easy overnight French toast casserole made with cinnamon rolls soaked in a rich custard, perfect for lazy mornings and special occasions.

Ingredients

Scale
  • 8 large cinnamon rolls (about 12 ounces/340 grams), pre-made or homemade, cut into bite-sized pieces
  • 6 large eggs, room temperature
  • 2 cups (480 ml) whole milk (can substitute almond or oat milk for dairy-free)
  • 1 cup (240 ml) heavy cream (can use all milk if preferred)
  • 2 teaspoons vanilla extract
  • 1 tablespoon ground cinnamon (plus extra for sprinkling on top)
  • 2 tablespoons brown sugar
  • ½ teaspoon salt
  • 2 tablespoons butter, melted (for greasing the baking dish and drizzling)

Instructions

  1. Lightly grease a 9×13 inch (23×33 cm) baking dish with 1 tablespoon of melted butter.
  2. Tear or cut the cinnamon rolls into bite-sized chunks.
  3. Spread the cinnamon roll pieces evenly in the baking dish, filling gaps but not overcrowding.
  4. In a large bowl, whisk together eggs, whole milk, heavy cream, vanilla extract, ground cinnamon, brown sugar, and salt until smooth and well combined.
  5. Slowly pour the custard over the cinnamon roll pieces, pressing gently with a spatula to ensure all pieces soak up the liquid.
  6. Cover the dish tightly with aluminum foil and refrigerate overnight or for at least 6 hours.
  7. The next morning, preheat the oven to 350°F (175°C). Remove the casserole from the fridge and let it sit at room temperature for about 15 minutes.
  8. Sprinkle extra ground cinnamon and brown sugar on top, then drizzle the remaining 1 tablespoon of melted butter over the surface.
  9. Bake uncovered for 40-45 minutes until the top is golden brown and slightly crisp and the custard center is set but still soft.
  10. Let the casserole cool for 5-10 minutes before cutting and serving.

Notes

If the top browns too fast, tent with foil halfway through baking. Use a toothpick to check doneness; it should come out mostly clean with a few moist crumbs. Room temperature eggs and milk help create a smooth custard. Overnight soak is key for soft but not soggy texture. Variations include adding nuts, chocolate chips, or berries. Dairy-free and gluten-free substitutions are possible.
