  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, cold and cubed

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Peel, core, and thinly slice about 6 medium apples (6 cups). Toss them into a large bowl.
  3. Add 2 tablespoons granulated sugar, 2 tablespoons light brown sugar, 1 teaspoon cinnamon, 1/4 teaspoon nutmeg, 1 tablespoon lemon juice, and 1 tablespoon all-purpose flour to the apples. Toss gently until evenly coated.
  4. Transfer the apple mixture to a 9×9-inch baking dish, spreading evenly without packing tightly.
  5. In a medium bowl, combine 1 cup rolled oats, 2/3 cup flour, 2/3 cup brown sugar, 1/2 teaspoon cinnamon, and 1/4 teaspoon salt. Mix well.
  6. Add 1/2 cup cold, cubed unsalted butter to the dry ingredients. Use a pastry cutter or fingers to blend until the mixture resembles coarse crumbs with some pea-sized bits.
  7. Sprinkle the topping evenly over the apples.
  8. Bake in the preheated oven for 35–40 minutes, or until the topping is golden brown and the apple filling is bubbly.
  9. Let the apple crisp cool for about 10 minutes before serving.

Keep butter cold when mixing topping to ensure a crumbly texture. Use a mix of tart and sweet apples for balanced flavor. Toss apples with lemon juice to prevent browning. If topping browns too fast, cover loosely with foil halfway through baking. Let crisp rest before serving to thicken juices.
