Cozy Freezer-Friendly Lasagna Roll-Ups with Easy Cheesy Spinach Filling

These lasagna roll-ups feature a creamy cheesy spinach filling and are perfect for cozy dinners or busy weeknights. They are freezer-friendly and easy to prepare, making them a comforting and practical meal.

  • 12 no-boil lasagna noodles (or 912 regular noodles boiled al dente)
  • 1 ½ cups (375g) whole milk ricotta cheese
  • 2 cups (200g) shredded mozzarella cheese
  • ½ cup (50g) grated Parmesan cheese
  • 10 ounces (280g) fresh spinach, roughly chopped (or well-drained frozen spinach)
  • 1 large egg, room temperature
  • 3 cloves garlic, minced
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 3 cups (720ml) marinara sauce
  • 1 teaspoon Italian seasoning (optional)

Instructions

  1. Preheat oven to 375°F (190°C) and lightly grease a 9×13 inch baking dish with olive oil or nonstick spray.
  2. Heat olive oil in a large skillet over medium heat. Add minced garlic and sauté for about 1 minute until fragrant. Add chopped spinach and cook until wilted, about 3-4 minutes. Remove from heat and let cool slightly.
  3. In a bowl, combine ricotta, 1 ½ cups shredded mozzarella, Parmesan, egg, sautéed spinach with garlic, Italian seasoning (if using), salt, and pepper. Mix until creamy and well blended.
  4. If using regular noodles, boil them in salted water until al dente (8-10 minutes), drain, and lay flat on a clean towel to prevent sticking. Skip this step if using no-boil noodles.
  5. Lay one noodle flat and spread about ¼ cup (60ml) of the spinach-cheese mixture evenly over it, leaving a ½ inch border. Roll the noodle gently but firmly. Repeat with remaining noodles and filling.
  6. Spread 1 cup (240ml) marinara sauce evenly on the bottom of the baking dish. Place roll-ups seam-side down in the dish. Pour remaining marinara sauce over the top and sprinkle with remaining ½ cup (50g) mozzarella cheese.
  7. Cover dish with foil and bake for 25 minutes. Remove foil and bake for an additional 10-15 minutes until cheese is bubbling and golden.
  8. Let roll-ups rest for 5 minutes before serving.

Notes

Do not overfill noodles to avoid bursting during baking. Sauté spinach to prevent watery filling. Use no-boil noodles to save time. Cover with foil while baking to keep moisture, then remove foil to brown cheese. For freezing, wrap each roll-up individually and store in freezer bag. Thaw overnight before reheating.
