  • 1 cup green beans, trimmed and chopped (fresh or frozen)
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 4 cups beef broth, low sodium preferred
  • 2 tablespoons tomato paste
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 1 bay leaf
  • 2 tablespoons fresh parsley, chopped (optional, for garnish)

Instructions

  1. Heat 1 tablespoon olive oil in a large Dutch oven over medium heat until shimmering, about 2 minutes.
  2. Add 1 pound ground beef and cook for 6-8 minutes, breaking it apart, until no longer pink and starting to brown. Drain excess fat if desired.
  3. Add diced onion and minced garlic to the pot with the beef. Cook for 3-4 minutes until softened and fragrant, stirring occasionally.
  4. Stir in sliced carrots, diced celery, cubed potatoes, and chopped green beans. Cook for 5 minutes to start softening the vegetables.
  5. Pour in 4 cups beef broth, 1 can diced tomatoes with juices, and 2 tablespoons tomato paste. Stir to combine.
  6. Add dried oregano, dried basil, bay leaf, salt, and pepper to taste. Stir well.
  7. Bring soup to a gentle boil, then reduce heat to low and cover. Simmer for 25-30 minutes until potatoes and carrots are tender.
  8. Remove bay leaf. Adjust seasoning if needed. For thicker broth, mash a few potato chunks against the pot side and stir.
  9. Ladle soup into bowls and garnish with fresh parsley if desired. Serve hot.

For a low-carb version, substitute potatoes with cauliflower florets. Add a pinch of red pepper flakes or diced jalapeño for a spicy kick.
