  • 1 cup whole milk, warmed (about 110°F / 43°C)
  • ½ cup granulated sugar
  • ⅓ cup unsalted butter, melted
  • 1 teaspoon salt
  • 2 large eggs, room temperature
  • 4 cups all-purpose flour
  • 1 cup brown sugar, packed
  • 3 tablespoons ground cinnamon
  • ⅓ cup unsalted butter, softened
  • 4 oz (115 g) cream cheese, softened
  • ½ cup powdered sugar
  • 2 tablespoons unsalted butter, softened
  • 1 teaspoon vanilla extract
  • 23 tablespoons whole milk (or substitute almond milk)

Instructions

  1. Activate the yeast by combining warm milk, granulated sugar, and yeast in a large mixing bowl. Let sit for 5–10 minutes until foamy.
  2. Add melted butter, salt, and eggs to the yeast mixture. Gradually add flour, mixing until dough forms. Knead for 8–10 minutes until smooth and elastic.
  3. Place dough in a lightly oiled bowl, cover, and let rise in a warm spot for about 1 hour or until doubled in size.
  4. Mix brown sugar and cinnamon for the filling. Set aside softened butter.
  5. Roll dough on a floured surface into a 16×12 inch rectangle. Spread softened butter evenly, then sprinkle cinnamon sugar mixture over it.
  6. Roll dough tightly from the long edge into a log. Cut into 12 equal slices about 1 to 1.5 inches thick.
  7. Arrange rolls in a greased 9×13 inch baking dish with space between. Cover loosely and refrigerate overnight (8–12 hours).
  8. Preheat oven to 350°F (175°C). Let rolls sit at room temperature for 20–30 minutes.
  9. Bake rolls for 25–30 minutes until golden brown. Cover with foil if tops brown too quickly.
  10. Make glaze by whisking cream cheese, powdered sugar, softened butter, vanilla, and milk until smooth. Adjust milk for desired consistency.
  11. Let rolls cool 10 minutes, then drizzle with cream cheese glaze and serve warm.

Notes

Use milk warmed to about 110°F to activate yeast properly. Knead dough until smooth and elastic for best texture. Dental floss can be used to cut rolls cleanly. Let rolls warm before baking for even cooking. Adjust glaze consistency with milk or powdered sugar as needed.
