  • 2 large eggs, room temperature
  • 1 cup (240ml) pumpkin puree (not pumpkin pie filling)
  • ½ cup (120ml) sour cream
  • 1 teaspoon vanilla extract
  • Optional add-ins: ½ cup chopped walnuts or pecans, ½ cup chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan and optionally line with parchment paper.
  2. In a medium bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, nutmeg, cloves, and ginger.
  3. In a large bowl, whisk granulated sugar, brown sugar, and vegetable oil until combined. Add eggs one at a time, beating well after each addition.
  4. Stir in pumpkin puree, sour cream, and vanilla extract.
  5. Gradually fold dry ingredients into wet ingredients with a rubber spatula until just combined. Fold in optional nuts or chocolate chips if using.
  6. Pour batter into prepared loaf pan and smooth the top. Tap pan gently to release air bubbles.
  7. Bake for 55-65 minutes, checking at 55 minutes with a toothpick until it comes out clean or with a few moist crumbs.
  8. Cool in pan for 15 minutes, then transfer to a cooling rack to cool completely.
