  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • Pinch of salt
  • 2 tablespoons softened cream cheese (30 g)
  • 1 tablespoon powdered sugar (8 g)
  • 1 tablespoon milk (15 ml) to loosen frosting swirl

Instructions

  1. Grate the carrots using a fine grater to get about 1/2 cup (60 g). Set aside.
  2. In a medium bowl, combine 1 cup (90 g) old-fashioned rolled oats, grated carrots, 1 cup (240 ml) milk of choice, 1/4 cup (60 g) plain Greek yogurt, 2 tablespoons (30 ml) maple syrup, 1 teaspoon vanilla extract, 1 teaspoon ground cinnamon, 1/4 teaspoon ground nutmeg, and a pinch of salt. Stir gently but thoroughly until well combined.
  3. In a small bowl, beat together 2 tablespoons (30 g) softened cream cheese, 1 tablespoon (8 g) powdered sugar, and 1 tablespoon (15 ml) milk until smooth and creamy with a thick but spoonable consistency.
  4. Spoon half of the oat mixture into serving jars or containers. Add a dollop of the cream cheese frosting swirl on top (about half of what you made). Add the remaining oat mixture to cover the frosting, then add the rest of the frosting on top. Use a toothpick or skewer to gently swirl the frosting through the oats to create a marbled effect.
  5. Seal the jars or containers and refrigerate for at least 6 hours or overnight to allow the oats to soften and flavors to meld.
  6. Serve chilled or at room temperature. Optionally, add extra toppings like chopped nuts or shredded coconut for crunch.

Notes

Use old-fashioned rolled oats for best texture; quick oats can get mushy. Keep cream cheese softened at room temperature for easier mixing. Adjust milk amount in the morning if oats are too thick. Vanilla extract enhances flavor significantly. For vegan version, use plant-based milk, coconut yogurt, and vegan cream cheese. Store leftovers up to 3 days refrigerated. Add frosting swirl fresh each day for best texture.
