A quick and indulgent creamy chicken dip with smoky bacon and sharp cheddar cheese, perfect for parties or a cozy night in.

Ingredients

Scale
  • 3 cups shredded cooked chicken (about 12 ounces or 340 grams), rotisserie chicken works well
  • 8 slices bacon, cooked and crumbled (preferably thick-cut)
  • 8 ounces cream cheese, softened (full-fat recommended)
  • 1 cup shredded cheddar cheese (about 4 ounces or 115 grams), sharp or extra sharp
  • ½ cup sour cream (120 ml)
  • ¼ cup mayonnaise (60 ml)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon freshly ground black pepper
  • 2 stalks green onions, thinly sliced (optional)
  • Pinch of red pepper flakes (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cook and crumble the bacon if not pre-cooked: fry in a skillet over medium heat for 8-10 minutes until crisp, then drain on paper towels and crumble. Set aside a small handful for garnish.
  3. In a mixing bowl, soften the cream cheese using an electric mixer or whisk until smooth and creamy (about 2-3 minutes).
  4. Add sour cream and mayonnaise to the cream cheese and mix until well combined and smooth.
  5. Stir in garlic powder, onion powder, and black pepper.
  6. Fold in the shredded chicken and crumbled bacon, ensuring the chicken is evenly coated with the creamy mixture.
  7. Mix in shredded cheddar cheese, reserving about ¼ cup (30 grams) for topping.
  8. Transfer the mixture to an 8×8 inch baking dish and smooth the top with a spatula.
  9. Sprinkle the reserved cheddar cheese and bacon pieces evenly over the surface.
  10. Bake for 20-25 minutes until hot, bubbly, and the cheese on top is melted and lightly golden.
  11. Remove from oven and let cool for 5 minutes.
  12. Sprinkle sliced green onions and a pinch of red pepper flakes on top if desired before serving.

Notes

If cream cheese is lumpy, warm gently in microwave for 15-20 seconds before mixing. Let dip rest 5 minutes after baking for easier scooping. Use thick-cut bacon for best texture. For a lighter dip, substitute sour cream with Greek yogurt. This recipe is naturally gluten-free but check bacon and seasonings labels to be sure.
