  • 8 ounces cream cheese, softened
  • 1/2 cup sour cream (or Greek yogurt as a substitute)
  • 23 fresh jalapeños, finely chopped (seeds removed for milder heat)
  • 1 cup shredded sharp cheddar cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon smoked paprika (optional)
  • Salt and pepper to taste
  • Fresh cilantro or green onions for garnish

Instructions

  1. Wearing gloves, finely chop 2-3 jalapeños, removing seeds if you prefer milder heat.
  2. Soften the cream cheese by leaving it at room temperature for at least 15 minutes or microwaving for 15 seconds without melting.
  3. In a mixing bowl, combine softened cream cheese and sour cream. Use a hand mixer on medium speed for 1-2 minutes until smooth and creamy.
  4. Stir in garlic powder, onion powder, smoked paprika, salt, and pepper until evenly mixed.
  5. Fold in the drained canned corn and chopped jalapeños gently with a spatula, keeping corn kernels mostly whole.
  6. Stir in shredded cheddar cheese until combined.
  7. Taste and adjust salt or jalapeño heat as needed.
  8. Serve immediately or chill for 30 minutes to let flavors meld. If too thick after chilling, stir in a tablespoon of milk or sour cream to loosen.

Notes

Wear gloves when chopping jalapeños to avoid skin irritation. For a milder dip, remove seeds from jalapeños. The dip tastes better after chilling for at least 30 minutes.
