  • 1/2 cup (60g) powdered sugar, sifted
  • 1 tsp vanilla extract
  • 1 tsp lemon zest
  • 1 cup (150g) strawberries, hulled and sliced
  • 1 cup (150g) blueberries
  • 1 cup (150g) raspberries
  • Optional: fresh mint leaves for garnish

Instructions

  1. Preheat oven to 350°F (175°C). In a large bowl, cream together softened butter and granulated sugar until light and fluffy, about 3-4 minutes using an electric mixer.
  2. Add salt and gradually mix in flour until dough just comes together. If too dry, add 1 teaspoon milk carefully. Dough will look crumbly but hold when pressed.
  3. Press dough evenly into bottom of a prepared 9×13-inch baking pan. Smooth out with bottom of a glass or hands.
  4. Bake for 18-20 minutes until edges start to turn golden. Let cool completely on a wire rack, about 30 minutes.
  5. While crust cools, beat cream cheese until smooth. Add sour cream, powdered sugar, vanilla extract, and lemon zest. Mix until silky and spreadable, about 2-3 minutes.
  6. Spread cream layer evenly over cooled shortbread crust using a spatula, smoothing gently.
  7. Arrange strawberries, blueberries, and raspberries on top of cream layer. Garnish with fresh mint leaves if desired.
  8. Refrigerate fruit pizza for at least 1 hour before serving to let cream layer firm up and flavors meld.

Let the crust cool completely before adding the cream layer to prevent melting. Use fresh, firm berries to avoid sogginess. Room temperature butter and cream cheese improve mixing and texture.
