  • 1.5 pounds boneless, skinless chicken breasts
  • 8 slices thick-cut bacon
  • 8 ounces cream cheese, softened
  • 1 packet (or 1 tablespoon homemade) ranch seasoning mix
  • 1 cup shredded cheddar cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and freshly ground black pepper, to taste
  • Fresh chives or green onions, chopped (optional, for garnish)

Instructions

  1. Chop the bacon into bite-sized pieces. Heat a large skillet over medium heat and cook the bacon until crispy, about 8-10 minutes. Remove bacon with a slotted spoon, leaving the rendered fat in the pan.
  2. Season the chicken breasts with garlic powder, onion powder, salt, and pepper. Add the chicken to the bacon fat in the skillet and cook on medium heat for 5-6 minutes per side until golden brown and cooked through (internal temperature 165°F). Remove chicken and set aside.
  3. Lower heat to medium-low. Add softened cream cheese to the skillet and stir to melt into the bacon fat. Slowly add ranch seasoning and stir well to combine. If sauce is too thick, add a splash of water or unsweetened almond milk to loosen.
  4. Return chicken to the skillet, spoon creamy sauce over the top. Sprinkle shredded cheddar cheese and cooked bacon pieces evenly over the chicken. Cover skillet with a lid and cook for 3-5 minutes until cheese is melted and bubbly.
  5. Remove from heat and garnish with chopped fresh chives or green onions.

Notes

Use room temperature cream cheese for a smooth sauce. Cook bacon slowly over medium heat to avoid burning. For faster cooking, slice chicken breasts thinly but avoid overcooking to prevent dryness. Cover pan when melting cheese to trap heat and meld flavors.
