  • 4 boneless, skinless chicken breasts (about 1.5 lbs / 680g), pounded slightly
  • Salt and pepper, to taste
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 3 cloves garlic, minced
  • ½ cup chopped sun-dried tomatoes (oil-packed recommended)
  • 1 cup (240 ml) chicken broth
  • ¾ cup (180 ml) heavy cream
  • ½ cup freshly grated Parmesan cheese
  • 1 teaspoon dried Italian herbs (or blend of oregano, thyme, and basil)
  • Pinch of red pepper flakes (optional)
  • Fresh basil or parsley, for garnish

Instructions

  1. Pat dry chicken breasts and season both sides generously with salt and pepper. Let rest at room temperature for about 5 minutes.
  2. Heat olive oil in a large skillet over medium-high heat. Add chicken breasts and cook 4-5 minutes per side until golden brown and cooked through (internal temperature 165°F / 74°C). Remove chicken and keep warm tented with foil.
  3. Reduce heat to medium. Add butter to the skillet and melt. Stir in minced garlic and cook for 30 seconds until fragrant.
  4. Add chopped sun-dried tomatoes and cook 1-2 minutes to soften and release flavor.
  5. Pour in chicken broth and scrape browned bits from the pan. Let broth reduce slightly for 3-4 minutes.
  6. Stir in heavy cream and Parmesan cheese. Lower heat to medium-low and stir gently until cheese melts and sauce thickens, about 3-5 minutes.
  7. Add dried Italian herbs and red pepper flakes if using. Adjust salt and pepper to taste.
  8. Return chicken breasts to the skillet, nestle into the sauce, and simmer for 2-3 minutes to meld flavors and warm through.
  9. Garnish with chopped fresh basil or parsley and serve hot.

Notes

If sauce is too thin, simmer longer to reduce. If too thick, add a splash of broth or cream. Use fresh garlic and freshly grated Parmesan for best flavor. Avoid boiling sauce after adding cream and cheese to prevent curdling.
