  • ½ cup chicken broth (120ml)
  • ¼ cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • ¼ teaspoon red pepper flakes (optional)
  • A handful fresh basil, chopped
  • Salt and pepper to taste

Instructions

  1. Pat dry chicken breasts and season both sides with salt, pepper, and Italian seasoning.
  2. Heat olive oil in a large skillet over medium-high heat. Add chicken and cook 5-6 minutes per side until golden brown and cooked through (internal temperature 165°F). Remove chicken and set aside.
  3. Reduce heat to medium. Add minced garlic and chopped sun-dried tomatoes to the skillet. Stir frequently for 1-2 minutes until fragrant.
  4. Pour in chicken broth, scraping up browned bits. Simmer for 2 minutes to reduce slightly.
  5. Stir in heavy cream and Parmesan cheese. Simmer gently for 3-4 minutes until sauce thickens. Add red pepper flakes if desired.
  6. Return chicken to skillet, nestle into sauce, cover loosely, and cook over low heat for 3-5 minutes to meld flavors.
  7. Turn off heat and sprinkle chopped fresh basil over the dish.
  8. Serve hot with sauce spooned over chicken, paired with pasta, rice, or crusty bread.
