Creamy Marry Me Pasta with Sun-Dried Tomato Sauce

A quick and easy creamy pasta dish featuring a luscious sun-dried tomato sauce that balances richness and zest, perfect for cozy dinners or a comforting treat.

  • 12 oz (340 g) fettuccine or your favorite pasta
  • 1 cup packed oil-packed sun-dried tomatoes (rehydrate dry-packed in warm water for 10 minutes if needed)
  • 3 cloves garlic, minced
  • 1 cup (240 ml) heavy cream
  • ½ cup (120 ml) chicken broth or vegetable broth
  • ½ cup (50 g) freshly grated Parmesan cheese
  • 2 tbsp extra virgin olive oil
  • ¼ tsp red pepper flakes (optional)
  • A handful fresh basil, chopped (or parsley)
  • Salt and freshly ground black pepper to taste

Instructions

  1. Bring a large pot of salted water to a boil. Add 12 oz fettuccine and cook according to package instructions (usually 10-12 minutes) until al dente. Reserve 1 cup (240 ml) of pasta water before draining. Drain pasta and set aside.
  2. Heat 2 tbsp olive oil in a large skillet over medium heat. Add 1 cup chopped oil-packed sun-dried tomatoes and sauté for about 2 minutes until softened and aromatic.
  3. Add 3 minced garlic cloves and cook for 30 seconds to 1 minute, being careful not to burn the garlic.
  4. Pour in ½ cup chicken broth and 1 cup heavy cream, stirring gently to combine. Bring to a simmer and let the sauce start thickening.
  5. Add ¼ tsp red pepper flakes (if using), salt, and freshly ground black pepper to taste. Simmer gently for 4-5 minutes, stirring occasionally, until slightly thickened but pourable.
  6. Reduce heat to low and stir in ½ cup freshly grated Parmesan cheese until melted and smooth. If sauce is too thick, add reserved pasta water a tablespoon at a time to reach desired consistency.
  7. Add cooked pasta to the sauce and toss well to coat. Heat together for 1-2 minutes to marry flavors. Taste and adjust seasoning if needed.
  8. Remove from heat and stir in chopped fresh basil.
  9. Serve immediately, garnished with extra Parmesan and basil.

Notes

Simmer sauce gently to prevent cream from curdling. Reserve pasta water to adjust sauce consistency. Use fresh Parmesan for best melting and flavor. Reheat leftovers gently with added cream or milk to restore silky texture.
