Instructions

  1. In a medium bowl, combine graham cracker crumbs, melted butter, and sugar. Mix until crumbs are evenly coated and mixture feels like wet sand.
  2. Press the crust mixture firmly and evenly into the bottom of a 9×9-inch square baking pan. Chill in the refrigerator for 10-15 minutes.
  3. In a large bowl, beat the softened cream cheese with an electric mixer on medium speed until smooth and creamy.
  4. Gradually add powdered sugar and vanilla extract, beating until fully incorporated.
  5. Stir in lemon zest and freshly squeezed lemon juice by hand until mixture thickens slightly.
  6. In a separate bowl, whip cold heavy cream to soft peaks (3-5 minutes on high speed).
  7. Gently fold the whipped cream into the cream cheese mixture in thirds, being careful not to overmix.
