Instructions

  1. Preheat your oven to 325°F (160°C). Lightly grease a 6-cup muffin tin or silicone molds to prevent sticking.
  2. In a blender or food processor, combine 6 large eggs, ½ cup small-curd cottage cheese, 2 tablespoons milk, ½ teaspoon salt, ¼ teaspoon black pepper, ¼ teaspoon garlic powder, and ¼ teaspoon onion powder. Blend until completely smooth and creamy, about 30 seconds.
  3. Transfer the blended egg mixture to a bowl. Stir in ½ cup shredded Gruyere or sharp white cheddar cheese and ¼ cup cooked bacon or ham bits if using. Fold in chopped chives or parsley for freshness.
  4. Pour the mixture evenly into the prepared muffin tin or silicone molds, filling each about ¾ full.
  5. Place the tin on the middle rack of the oven. Bake for 22-25 minutes, or until the egg bites are set but still slightly jiggly in the center.
  6. Let the egg bites cool for 5 minutes before gently removing them from the molds.
