These crispy air fryer beef taquitos are a quick, easy, and healthier alternative to deep-fried taquitos, paired perfectly with a creamy avocado crema for a fresh and satisfying flavor.

  • 1 lb (450 g) ground beef (80% lean)
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • Salt and pepper, to taste
  • 12 small corn tortillas
  • Olive oil spray
  • For the avocado crema:
  • 1 medium ripe avocado
  • 1/4 cup (60 ml) plain Greek yogurt (or dairy-free coconut yogurt)
  • 1 tbsp lime juice
  • 1 clove garlic, minced
  • Pinch of salt

Instructions

  1. Heat a large skillet over medium heat. Add ground beef and chopped onion. Cook, breaking up the meat with a spatula, until beef is browned and onions are translucent, about 7-8 minutes.
  2. Add minced garlic, cumin, chili powder, salt, and pepper. Stir well and cook for another 1-2 minutes until fragrant. Remove from heat and let cool slightly.
  3. Warm corn tortillas slightly in a dry skillet or microwave wrapped in a damp paper towel until pliable.
  4. Spoon about 2 tablespoons (30 g) of beef mixture onto each tortilla, spreading it evenly in a line.
  5. Fold the sides of the tortilla over the filling and roll tightly from one end to the other. Place seam-side down on a plate or tray to keep them closed.
  6. In a blender or food processor, combine ripe avocado, Greek yogurt, lime juice, minced garlic, and a pinch of salt. Blend until smooth and creamy. Set aside in the fridge.
  7. Preheat air fryer to 400°F (200°C) for 3 minutes.
  8. Lightly spray each taquito with olive oil spray to help crisping.
  9. Place taquitos in a single layer in the basket, seam side down. Cook for 5-6 minutes, then flip and cook another 5-6 minutes until golden brown and crispy. Avoid overcrowding; cook in batches if necessary.
  10. Serve immediately with a generous dollop of creamy avocado crema on the side. Garnish with chopped cilantro or fresh lime wedges if desired.

Notes

Do not overload the filling to avoid soggy taquitos. Warm tortillas before rolling to prevent cracking. Lightly spray with oil before air frying for best crispiness. Flip halfway through cooking. Avoid overcrowding the air fryer basket. If taquitos are not crispy enough, add 2-3 more minutes of cooking time but watch closely to prevent burning. For dairy-free crema, substitute Greek yogurt with coconut yogurt. Taquitos can be baked in a convection oven at 425°F (220°C) for 15-20 minutes, flipping halfway.
