  • 4 boneless pork chops, about 6 oz (170 g) each, ½-inch thick
  • Salt & pepper, to season
  • ½ cup (65 g) all-purpose flour
  • 2 large eggs, beaten, room temperature
  • 1 ½ cups (150 g) panko breadcrumbs
  • ¼ cup (25 g) finely grated Parmesan cheese
  • 1 tsp dried Italian herbs (oregano, thyme, basil)
  • Garlic Herb Butter:
  • 4 tbsp (57 g) unsalted butter, softened
  • 3 cloves fresh garlic, minced
  • 2 tbsp fresh parsley, finely chopped
  • 1 tsp fresh thyme leaves (optional)
  • Salt & pepper, to taste
  • Olive oil spray

Instructions

  1. Pat the pork chops dry with paper towels and season both sides generously with salt and pepper. Set aside.
  2. Set up breading stations: place flour in one bowl, beaten eggs in a second bowl, and combine panko breadcrumbs, grated Parmesan, and dried Italian herbs in a third bowl.
  3. Dredge each pork chop in flour, shaking off excess. Dip into beaten eggs, letting extra drip off. Press firmly into breadcrumb mixture, coating both sides evenly.
  4. Preheat the air fryer to 400°F (200°C) for about 5 minutes.
  5. Lightly spray the air fryer basket with olive oil spray. Arrange pork chops in a single layer without overlapping. Spray tops lightly with olive oil spray.
  6. Cook for 10 minutes, then flip pork chops, spray the other side lightly, and cook for an additional 6-8 minutes until golden brown and internal temperature reaches 145°F (63°C).
  7. While pork chops cook, gently melt butter in a small saucepan over low heat. Add minced garlic and cook 1-2 minutes until fragrant but not brown. Stir in parsley, thyme, salt, and pepper. Keep warm.
  8. Transfer cooked pork chops to a warm plate. Spoon garlic herb butter over the top, letting it melt into the crust. Optionally, sprinkle extra fresh parsley for garnish.
  9. Rest pork chops for 3-4 minutes before serving to allow juices to redistribute.

Notes

Do not overcrowd the air fryer basket; cook in batches if needed. Rest pork chops after cooking for juicy results. Use a meat thermometer to ensure internal temperature reaches 145°F (63°C). For extra thick crust, double coat with egg and breadcrumbs but watch cooking time to avoid dryness. Olive oil spray is key for golden, crispy crust. Garlic herb butter can be made ahead and warmed before serving.
