Instructions

  1. Pat the salmon fillets dry with paper towels to remove excess moisture. Cut into 1-inch bite-sized cubes, keeping them uniform for even cooking.
  2. Place the salmon cubes in a mixing bowl. Drizzle with 1 tablespoon olive or avocado oil and sprinkle with salt and black pepper. Toss gently to coat all pieces evenly.
  3. Sprinkle 2 tablespoons of cornstarch over the salmon bites. Toss carefully until each piece is lightly coated, avoiding clumps.
  4. Preheat the air fryer to 400°F (200°C) for 3-5 minutes.
  5. Arrange the salmon cubes in a single layer in the air fryer basket. Cook for 7-9 minutes, shaking or flipping halfway through to brown all sides evenly. The salmon should be opaque and flake easily when done.
  6. While the salmon cooks, whisk together 3 tablespoons honey, 2 tablespoons sriracha, 1/2 teaspoon garlic powder, and 1 teaspoon rice vinegar in a small saucepan. Warm over low heat for 2-3 minutes until slightly thickened and glossy, stirring constantly.
  7. Transfer the cooked salmon bites to a bowl, pour the warm honey sriracha glaze over them, and toss gently to coat evenly.
  8. Garnish with sesame seeds and chopped green onions if desired. Serve immediately for best crisp texture.
