  • 4 tablespoons (60 grams) unsalted butter, melted
  • 1 tablespoon granulated sugar
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • 1012 mini marshmallows per pie
  • 1/4 cup (40 grams) semi-sweet chocolate chunks or chips per pie
  • Optional: pinch of cinnamon for crust
  • Optional variations: almond flour or gluten-free graham cracker crumbs for gluten-free crust, coconut oil and dairy-free chocolate and marshmallows for vegan option

Instructions

  1. Crush the graham crackers into fine crumbs using a rolling pin or food processor.
  2. Melt the butter in a microwave-safe bowl, then stir in vanilla extract and salt.
  3. Combine graham cracker crumbs, melted butter mixture, and sugar in a mixing bowl until crumbs are evenly coated and hold together when pressed. Add a teaspoon of water if mixture is too dry.
  4. Press half the crust mixture evenly into the bottom of silicone muffin molds or small ramekins to form individual pie bases, about 1/4 inch thick.
  5. Add 10-12 mini marshmallows and 1/4 cup chocolate chunks on top of each crust base without overfilling.
  6. Press the remaining crust mixture gently over the filling, sealing the edges to form hand pies.
  7. Preheat the air fryer to 350°F (175°C) for 3 minutes.
  8. Place the pies in the air fryer basket lined with parchment paper, ensuring they do not touch.
  9. Air fry for 8-10 minutes, checking halfway for even browning until crust is golden and crisp.
  10. Let the pies cool for 5 minutes before serving to allow filling to set.
  11. Serve warm or at room temperature. Store leftovers in an airtight container at room temperature for up to 2 days.
