A delicious and easy-to-make quesadilla burger featuring seasoned beef patties wrapped in a crispy, cheesy quesadilla exterior, perfect for a flavorful and comforting meal.

Ingredients

Scale
  • 1 lb ground beef (80/20 blend)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp smoked paprika
  • Salt and black pepper, to taste
  • 1 tbsp Worcestershire sauce
  • 4 large flour tortillas
  • 1 cup shredded sharp cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • Butter or oil for frying
  • 4 slices crispy bacon (optional)
  • Lettuce leaves
  • Tomato slices
  • Pickles
  • Chipotle mayo or favorite burger sauce

Instructions

  1. In a mixing bowl, combine ground beef with garlic powder, onion powder, smoked paprika, salt, pepper, and Worcestershire sauce. Mix gently to combine without overworking the meat.
  2. Divide the mixture into 4 equal portions and shape each into a ¾-inch thick patty. Press a slight indentation in the center of each to prevent puffing while cooking.
  3. Heat a large skillet over medium-high heat and lightly oil or butter the pan. Cook patties for about 4 minutes per side or until internal temperature reaches 160°F (71°C). Set aside and let rest for a few minutes.
  4. Lay one flour tortilla flat. Sprinkle evenly with a mix of ¼ cup sharp cheddar and ¼ cup Monterey Jack cheese.
  5. Place one cooked beef patty on half of the tortilla over the cheese. Add bacon slices if using, then additional cheese on top of the patty. Fold the tortilla in half to create a quesadilla sandwich.
  6. Heat the skillet over medium heat and melt a small pat of butter. Place the folded quesadilla burger in the pan and cook for 3-4 minutes per side until golden brown and cheese is melted inside. Press gently with a spatula for even crisping.
  7. Spread chipotle mayo on the plate or inside the quesadilla if desired. Serve with lettuce, tomato, and pickles on the side or tucked inside before folding. Enjoy immediately!

Notes

Do not overmix the beef to keep patties tender. Press a dimple in the center of patties to prevent puffing. Cook quesadilla on medium heat to avoid burning the tortilla. Rest patties before assembling to lock in juices. Cover pan briefly if cheese isn’t melting. Fold tortilla tightly and press gently while cooking to prevent filling from sliding out.
