  • 1/2 cup (100g) granulated sugar
  • 2 large egg whites, room temperature
  • 2 tablespoons unsalted butter, melted and slightly cooled
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon almond extract (optional)
  • Pinch of salt
  • 1 cup (170g) semi-sweet chocolate chips
  • Fortunes or cute messages printed on thin strips of paper (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.
  2. In a medium bowl, whisk together sifted all-purpose flour, sugar, and a pinch of salt.
  3. In a separate bowl, lightly whisk egg whites until frothy but not stiff, just starting to hold soft peaks.
  4. Slowly fold the egg whites into the dry mixture along with melted butter, vanilla extract, and almond extract if using. Mix gently until smooth; the batter will be thin.
  5. Using a tablespoon, drop about 1 tablespoon of batter onto the baking sheet and quickly spread it into a thin 3-inch circle.
  6. Bake for 7-8 minutes or until the edges turn golden brown.
  7. Working quickly, use a spatula to lift one cookie, place a fortune strip in the center, fold in half, then bend the cookie edges over the rim of a cup or bowl to form the classic fortune cookie shape. Let cool on a rack.
  8. Melt the semi-sweet chocolate chips in a microwave-safe bowl in 20-second intervals, stirring between each until smooth.
  9. Once cookies are fully cooled, dip the open ends into the melted chocolate. Place back on parchment paper until the chocolate sets, about 15-20 minutes at room temperature or chilled in the fridge.

Notes

Work quickly when shaping cookies as they harden fast. Do not overbake; cookies will crisp more as they cool. Temper chocolate for a glossy finish or chill dipped cookies to set chocolate faster. If you miss the folding window, crumble cookies for ice cream topping.
