  • 4 oz (115 g) dark chocolate (70% cocoa recommended)
  • 1 cup (240 ml) heavy cream
  • 2 tablespoons (25 g) granulated sugar
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Make the churro dough: In a medium saucepan, combine water, sugar, salt, and butter. Bring to a boil over medium heat, stirring occasionally until butter melts. Remove from heat and stir in sifted flour until mixture forms a ball and pulls away from the sides.
  2. Cool slightly and add eggs: Let dough cool for about 5 minutes until warm but not hot. Beat in eggs one at a time, mixing thoroughly after each until dough is smooth and shiny. If dough is too stiff, add a teaspoon of water.
  3. Heat the oil: Pour vegetable oil into a deep pot about 2 inches deep. Heat over medium heat to 350°F (175°C). Test by dropping a small bit of dough into oil; it should sizzle and float.
  4. Pipe and fry churros: Fill a piping bag fitted with a large star tip with dough. Pipe 4-6 inch lengths into hot oil, cutting dough with scissors or knife. Fry in batches, turning occasionally, about 2-3 minutes per side until golden and crispy. Avoid overcrowding.
  5. Drain and coat: Remove churros with tongs or slotted spoon and place on cooling rack lined with paper towels. While warm, toss churros in cinnamon sugar mixture to coat evenly.
  6. Make the chocolate sauce: In a small saucepan, heat heavy cream with sugar and salt over medium heat until just simmering. Remove from heat and add chopped dark chocolate. Let sit 2 minutes, then whisk until smooth. Stir in vanilla extract and keep warm.
  7. Serve immediately: Arrange churros on a platter with a bowl of warm chocolate sauce for dipping. Enjoy while warm.

Notes

Maintain oil temperature around 350°F (175°C) for crispy churros. Avoid overcrowding the pot to keep oil temperature steady. Use a candy thermometer if available. If dough is too loose, add more flour. For gluten-free, substitute flour with almond or gluten-free blend. For dairy-free, use coconut oil and coconut cream. Serve churros immediately for best crispness. Reheat leftovers in oven, not microwave.
