  • 1 cup (227 g) unsalted butter, melted
  • 1 cup (200 g) packed brown sugar
  • 2 cups (340 g) semi-sweet chocolate chips
  • Optional toppings: chopped nuts (pecans or walnuts), sea salt flakes

Instructions

  1. Preheat your oven to 350°F (175°C). Line a rimmed baking sheet with parchment paper or a silicone baking mat. Arrange the Ritz crackers in a single layer, fitting them snugly together without overlapping.
  2. In a medium saucepan over medium heat, combine 1 cup (227 g) unsalted butter and 1 cup (200 g) packed brown sugar. Stir constantly until the sugar dissolves and the mixture reaches a gentle boil, about 3-4 minutes, until smooth and caramel-colored.
  3. Pour the toffee mixture evenly over the arranged Ritz crackers. Use a spatula or the back of a spoon to gently spread and coat the crackers completely.
  4. Bake for 5 minutes at 350°F (175°C), watching carefully to prevent burning.
  5. Remove from oven and immediately sprinkle 2 cups (340 g) chocolate chips evenly over the hot toffee and crackers. Let sit for about 5 minutes to melt.
  6. Smooth the melted chocolate with an offset spatula or back of a spoon. If desired, sprinkle chopped nuts or sea salt flakes on top.
  7. Let the cookie sheet cool at room temperature for at least 1 hour or refrigerate for 30 minutes to set. Once hardened, break into pieces.

Notes

Work quickly when pouring the toffee mixture to cover all crackers before it thickens. If chocolate doesn’t melt evenly, briefly return the pan to the warm oven for 30 seconds. Cooling completely is crucial to avoid sticky, soft toffee. For gluten-free or dairy-free versions, substitute crackers, butter, and chocolate accordingly.
