A quick and easy casserole that transforms simple mashed potatoes into a crispy, loaded dish topped with cheese, bacon, green onions, and everything bagel seasoning for a flavorful crunch.

  • 3 pounds russet or Yukon Gold potatoes, peeled and quartered
  • 6 tablespoons unsalted butter, softened
  • 1 cup whole milk, warmed
  • 1/2 cup sour cream
  • 1 cup sharp cheddar cheese, shredded
  • 6 slices cooked bacon, crumbled
  • 3 stalks green onions, thinly sliced
  • 2 tablespoons everything bagel seasoning
  • Salt and pepper to taste

Instructions

  1. Place peeled and quartered potatoes into a large pot and cover with cold water. Add a pinch of salt. Bring to a boil over medium-high heat, then reduce to a simmer. Cook until potatoes are fork-tender, about 15-20 minutes.
  2. Drain potatoes thoroughly and return them to the pot or a large bowl. While still hot, mash with a potato masher or ricer until smooth. Avoid over-mashing to prevent gluey texture.
  3. Stir in softened butter, warm milk, and sour cream. Mix gently but thoroughly until creamy and smooth. Season with salt and pepper to taste.
  4. Fold in shredded cheddar cheese, crumbled bacon, and sliced green onions. Reserve a handful of cheese and bacon for topping if desired.
  5. Spread the mashed potato mixture evenly into a greased 9×13-inch baking dish. Sprinkle the reserved cheese and bacon on top, then generously scatter the everything bagel seasoning over everything.
  6. Preheat oven to 375°F (190°C). Bake uncovered until the top is golden and crispy, about 20-25 minutes.
  7. Let the casserole rest for 5 minutes before serving to help it set.

Notes

If topping browns too fast, tent loosely with foil halfway through baking. For extra creaminess, whip potatoes with a hand mixer before adding cheese and bacon. Use warm milk to keep mash smooth. Reserve some cheese and bacon for a crispy topping. Leftover mashed potatoes can be used. To get crispier topping, spread evenly and optionally broil for last 1-2 minutes while watching closely.
