Ingredients

Scale
  • 32 ounces (900 grams) frozen tater tots
  • 8 ounces (225 grams) thick-cut bacon slices
  • 2 cups (200 grams) sharp cheddar cheese, shredded
  • 1/2 cup (120 ml) sour cream
  • 3 large green onions, thinly sliced
  • 1/4 cup (60 ml) mayonnaise
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and black pepper to taste
  • Optional: 1-2 jalapeños, diced
  • Optional: diced tomatoes

Instructions

  1. Preheat your oven to 400°F (200°C). Lightly grease a 9×13-inch baking dish with non-stick spray or butter.
  2. Cook the bacon in a skillet over medium heat until crispy, about 8-10 minutes. Drain on paper towels and chop into bite-sized pieces.
  3. In a large bowl, combine sour cream, mayonnaise, garlic powder, onion powder, salt, and pepper. Stir until smooth. Add sliced green onions (reserve some for garnish) and chopped bacon, mixing gently.
  4. Spread half of the frozen tater tots (16 ounces / 450 grams) evenly in the prepared baking dish. Press down firmly to create a compact layer.
  5. Spread the creamy bacon mixture evenly over the first layer of tots.
  6. Sprinkle 1 cup (100 grams) shredded cheddar cheese evenly over the creamy layer.
  7. Layer the remaining tater tots (16 ounces / 450 grams) on top, pressing lightly to compact.
  8. Sprinkle the remaining 1 cup (100 grams) shredded cheddar cheese evenly over the top layer.
  9. Bake for 25-30 minutes until the top is golden brown and tots are crispy. Use bubbly cheese and crispy edges as a guide.
  10. Remove from oven and let cool for 5 minutes. Garnish with reserved green onions, slice into bars, and serve warm.

Notes

Press the tater tots firmly to create a crispy crust. Cook bacon until crisp but not burnt. If cheese isn’t bubbly after baking, broil for 1-2 minutes watching closely. For gluten-free, use certified gluten-free tater tots and check all ingredients. Leftovers reheat best in oven to maintain crispiness.
