Crispy Prosciutto Wrapped Asparagus

A quick and elegant appetizer featuring tender asparagus wrapped in crispy prosciutto, perfect for any occasion and easy to prepare in under 20 minutes.

  • 1 pound (450 grams) asparagus spears, firm and bright green, about pencil thickness
  • 810 slices prosciutto, thinly sliced
  • 12 tablespoons extra virgin olive oil
  • Freshly ground black pepper, to taste
  • Lemon zest from 1 lemon (optional)
  • Grated Parmesan cheese (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash and dry the asparagus. Trim the woody ends by snapping them off where they naturally break or slicing about 1-2 inches from the bottom.
  3. Group 3-4 asparagus spears together depending on thickness.
  4. Wrap one slice of prosciutto around each bundle tightly but not tearing the prosciutto.
  5. Place bundles on a baking sheet lined with parchment paper or a silicone baking mat.
  6. Drizzle 1-2 tablespoons of olive oil evenly over the bundles and sprinkle freshly ground black pepper to taste.
  7. Optionally, add lemon zest over the top.
  8. Roast in the oven for 12-15 minutes. Halfway through (around 7 minutes), use tongs to turn the bundles for even crisping. The prosciutto should be crispy and golden, and the asparagus tender but still bright green.
  9. Remove from oven and sprinkle with grated Parmesan cheese if desired. Let cool slightly before serving.

Notes

Dry asparagus thoroughly before wrapping to avoid sogginess. Turn bundles halfway through baking for even crispiness. If prosciutto crisps too fast, tent loosely with foil and finish roasting. Avoid overcrowding the baking sheet for best results. Leftovers keep well refrigerated for up to 2 days and reheat in oven at 350°F for 5-7 minutes to restore crispiness. Avoid microwaving.
