A quick and easy recipe for crispy roasted asparagus topped with golden, melted Parmesan cheese. Perfect as a snack or side dish that’s both healthy and delicious.

  • 1 pound fresh asparagus, trimmed
  • 2 tablespoons extra virgin olive oil
  • ½ cup grated Parmesan cheese (about 50g), freshly grated
  • ½ teaspoon garlic powder
  • ½ teaspoon salt (sea salt or kosher salt preferred)
  • ¼ teaspoon freshly cracked black pepper
  • Optional: zest from ½ lemon

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Trim the asparagus by snapping or cutting off the tough, woody ends (about 1-2 inches).
  3. In a mixing bowl, toss the asparagus with olive oil, garlic powder, salt, and pepper until evenly coated.
  4. Arrange the asparagus in a single layer on a prepared baking sheet lined with parchment paper or a silicone baking mat.
  5. Roast in the oven for 10-12 minutes, flipping the stalks halfway through with tongs to ensure even cooking. The asparagus should be tender but still have a slight snap.
  6. Sprinkle the grated Parmesan evenly over the asparagus and return to the oven for an additional 2-3 minutes until the cheese melts and turns golden brown and crispy.
  7. Optionally, sprinkle fresh lemon zest over the asparagus immediately after removing from the oven.
  8. Serve immediately for best crunch and flavor.

Notes

Do not wash asparagus until right before cooking to avoid excess moisture which prevents crispiness. Use freshly grated Parmesan for best melting and crisping. Watch the oven closely during the last few minutes to prevent burning the cheese. Thicker asparagus stalks may require slightly longer roasting or can be sliced lengthwise to speed cooking. Let asparagus rest a few minutes after roasting to allow flavors to settle but serve promptly to maintain crispness.
