A crispy, cheesy, sausage-packed breakfast casserole that is quick and easy to make, perfect for busy mornings or brunch. This comforting dish combines frozen tater tots, breakfast sausage, eggs, and sharp cheddar cheese baked to golden perfection.

  • 1 lb breakfast sausage (ground pork)
  • 2 cups shredded sharp cheddar cheese
  • 8 large eggs
  • 1 cup whole milk
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp fresh parsley, chopped (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Heat a large skillet over medium heat. Add the breakfast sausage, breaking it up with a spatula. Once it starts browning (about 5-7 minutes), add the chopped onion and minced garlic. Cook until onions soften and sausage is fully browned, around 3-4 more minutes. Drain any excess grease.
  3. Spread the frozen tater tots evenly in your 9×13 inch baking dish. No need to thaw them; they’ll crisp up beautifully in the oven.
  4. Spoon the cooked sausage, onion, and garlic evenly over the tater tots.
  5. In a large bowl, whisk together the eggs, milk, salt, and black pepper until completely combined.
  6. Sprinkle 1 cup of shredded cheddar cheese over the sausage layer.
  7. Slowly pour the egg mixture evenly over the entire casserole, allowing it to seep between the tater tots and meat.
  8. Sprinkle the remaining 1 cup of shredded cheddar cheese on top for a golden, bubbly finish.
  9. Bake uncovered for 45-50 minutes until the casserole is golden brown and bubbly. Insert a knife in the center to check doneness; it should come out clean and the eggs fully set.
  10. Let the casserole rest for 5-10 minutes before slicing to help it firm up and make serving easier.

Notes

Do not thaw the tater tots before baking to ensure crispiness. Drain excess grease from the sausage but do not rinse it to keep flavor. Use room temperature eggs for better mixing and even setting. Let the casserole rest before slicing to prevent it from falling apart. For extra crispiness, broil for the last 2-3 minutes but watch closely to avoid burning.
