Instructions

  1. Wash and finely chop 1 cup (about 150g) of fresh strawberries. Set aside.
  2. In a large bowl, beat 8 oz (225g) of softened cream cheese with an electric mixer until smooth and creamy, about 2-3 minutes.
  3. Gradually add 1 cup (120g) powdered sugar and 1 teaspoon pure vanilla extract to the cream cheese. Beat until combined and fluffy, roughly 2 minutes.
  4. In a separate chilled bowl, whip 1/2 cup (120ml) cold heavy cream until soft peaks form, about 3-5 minutes.
  5. Gently fold the whipped cream into the cream cheese mixture using a spatula to lighten the texture.
  6. Fold the chopped strawberries into the filling, distributing evenly without smushing them.
  7. Using a small cookie scoop or spoon, portion the mixture into 1-inch (2.5 cm) rounds onto a parchment-lined baking sheet. Leave space between each bite. Chill in the fridge for at least 1 hour to firm up.
  8. In a microwave-safe bowl, combine 6 oz (170g) dark chocolate chips with 1 teaspoon coconut oil. Heat in 20-second bursts, stirring between each, until smooth and glossy.
  9. Using a fork or skewer, dip each chilled cheesecake bite into the melted chocolate, letting excess drip off. Place back on parchment paper.
  10. Refrigerate dipped bites for 30 minutes or until chocolate sets. Enjoy or store until serving.
