  • 4 boneless, skinless chicken breasts (about 1.5 pounds / 700g)
  • 1 (6 oz / 170g) boxed herb-flavored stuffing mix
  • 1 ½ cups (360ml) low-sodium chicken broth
  • 4 tablespoons (60g) butter, melted
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried sage
  • Salt and pepper to taste
  • Optional: ½ cup (60g) chopped celery
  • Optional: ½ cup (50g) sliced mushrooms

Instructions

  1. In a large bowl, combine the boxed stuffing mix with chopped onion, garlic, dried thyme, dried sage, salt, and pepper.
  2. Pour in the chicken broth and melted butter, stirring until the stuffing is evenly moistened but not soggy.
  3. Spread the stuffing mixture evenly in the bottom of your crockpot.
  4. Pat the chicken breasts dry with paper towels, then sprinkle both sides with salt and pepper. Optionally, add a pinch more thyme or sage.
  5. Lay the seasoned chicken breasts on top of the stuffing layer, spacing them evenly.
  6. Cover and set the crockpot to low. Cook for 4-5 hours until the chicken reaches an internal temperature of 165°F (74°C).
  7. After cooking, carefully transfer the chicken to plates and fluff the stuffing with a fork before serving.

Notes

Do not lift the lid during cooking to maintain heat. If stuffing seems dry at the end, add a splash of broth and stir before serving. For gluten-free, use certified gluten-free stuffing mix. Chicken thighs can be used instead of breasts with the same cooking time. You can prep the meal the night before and refrigerate, adding 30 minutes to cooking time. Optional add-ins like celery or mushrooms add texture and nutrition.
