These easy make-ahead Caprese skewers combine fresh mozzarella, cherry tomatoes, and basil with a drizzle of balsamic glaze for a quick, crowd-pleasing appetizer perfect for parties.

Ingredients

  • Creamy fresh mozzarella balls (bocconcini or ciliegine)
  • Ripe cherry or grape tomatoes
  • Fresh basil leaves
  • 1 tablespoon extra virgin olive oil
  • Balsamic glaze (store-bought or homemade)
  • Salt, to taste
  • Freshly cracked black pepper, to taste
  • Wooden toothpicks or small skewers

Instructions

  1. Rinse cherry tomatoes and basil leaves under cool water and pat dry. Drain the mozzarella balls well to avoid watery skewers.
  2. In a mixing bowl, toss the mozzarella balls and tomatoes with about 1 tablespoon of extra virgin olive oil. Sprinkle lightly with salt and freshly cracked black pepper.
  3. Take a toothpick or small skewer and thread one cherry tomato, a folded basil leaf, and one mozzarella ball. Repeat until you have as many skewers as desired (about 20 skewers serve 6-8 people).
  4. Lay the skewers neatly on a baking sheet or platter. Cover tightly with plastic wrap and refrigerate for up to 24 hours if preparing ahead.
  5. Just before serving, drizzle the skewers generously with balsamic glaze. Optionally, add a little more olive oil and a sprinkle of fresh cracked pepper.

Notes

Do not over-saturate the mozzarella with olive oil to avoid soggy skewers. Use fresh basil leaves just before assembling to keep them vibrant. Chill skewers in the fridge but do not freeze. If balsamic glaze is too thick, thin with a splash of water. Assemble skewers with mozzarella not too cold to soften flavor and texture. Add balsamic glaze just before serving to prevent sogginess.
