These kabobs combine smoky turkey and melty cheese with fresh veggies for a quick, healthy snack that’s perfect for busy days or gatherings.

Ingredients

Scale
  • 8 ounces (225 grams) turkey deli meat, thinly sliced (smoked or herb-seasoned recommended)
  • 8 ounces (225 grams) cheddar cheese, cut into 1-inch cubes (sharp or mild)
  • 1 cup (150 grams) cherry tomatoes, halved
  • 1 medium cucumber, sliced into bite-sized rounds
  • About 12 fresh basil leaves (optional)
  • 2 tablespoons (30 ml) olive oil
  • 1 tablespoon (15 ml) lemon juice
  • Salt and freshly ground black pepper, to taste
  • 68 wooden or bamboo skewers, soaked in water for 10 minutes

Instructions

  1. Cut the cheddar cheese into 1-inch cubes. Slice the cucumber into bite-sized rounds, and halve the cherry tomatoes. Set aside fresh basil leaves.
  2. In a small bowl, whisk together olive oil, lemon juice, salt, and freshly ground black pepper to make a dressing.
  3. Lay the turkey deli meat flat and cut each slice into roughly 3-inch strips for easy rolling.
  4. Fold one turkey strip around a cheese cube to form a small roll. Slide this roll onto a skewer first, followed by a cherry tomato half, a cucumber slice, and a fresh basil leaf. Repeat this pattern until the skewer is full (about 3-4 sets per skewer).
  5. Lightly drizzle the olive oil and lemon dressing over the assembled kabobs.
  6. Serve immediately or chill in the fridge for 10–15 minutes to meld flavors and firm up the cheese.

Notes

Soak skewers in water for 10 minutes to prevent burning if grilling. For extra flavor, sprinkle smoked paprika or dried Italian herbs before serving. Lightly grilling kabobs for 1-2 minutes per side adds a smoky char but watch to avoid melting cheese. Use toothpicks for mini kabobs if skewers are unavailable.
