Instructions

  1. Activate the yeast: In a small bowl, combine warm milk (110°F / 43°C), sugar, and yeast. Stir gently and let it sit until foamy, about 5-10 minutes.
  2. Mix the dough: In a large bowl or stand mixer bowl, whisk together the flour and salt. Add the melted butter, eggs, and the activated yeast mixture. Stir to combine until a shaggy dough forms.
  3. Knead the dough: Knead on medium speed with dough hook until smooth and elastic (8-10 minutes) or by hand on a floured surface until soft and slightly tacky but not sticky.
  4. First rise: Place dough in a lightly greased bowl, cover with a kitchen towel or plastic wrap, and let it rise in a warm spot until doubled in size, about 1 hour.
  5. Shape the rolls: Punch down the dough gently to release air. Divide into 12 equal pieces (about 60g / 2 oz each). Shape each into a smooth ball and place close together in a greased baking dish or on a baking sheet.
  6. Second rise: Cover the shaped rolls and let them rise until puffy and nearly doubled, about 30-40 minutes.
  7. Bake: Preheat oven to 350°F (175°C). Bake rolls for 15-18 minutes until golden brown on top.
  8. Make cinnamon butter: While rolls bake, combine softened butter, powdered sugar, cinnamon, and vanilla in a small bowl. Mix until creamy and spreadable.
