  • 1 (15-ounce) can black beans, rinsed and drained
  • About 2 ears fresh corn, kernels cut off (about 1 1/2 cups) or frozen corn, thawed
  • 1 cup cherry tomatoes, halved
  • 1 medium red bell pepper, finely diced
  • 1/4 cup red onion, finely chopped
  • 1 jalapeño, seeded and minced (optional)
  • 1/4 cup fresh cilantro, chopped
  • 1 ripe avocado, diced (optional)
  • Juice of 2 limes (about 2 tablespoons)
  • 3 tablespoons extra virgin olive oil
  • 1/2 teaspoon ground cumin
  • Salt and pepper, to taste
  • Optional add-ins: diced cucumber, chopped green onions, or a splash of apple cider vinegar

Instructions

  1. Rinse and drain the black beans thoroughly to remove excess salt and starch.
  2. Cut kernels off 2 fresh ears of corn or use thawed frozen corn.
  3. Halve the cherry tomatoes, finely dice the red bell pepper, and finely chop the red onion.
  4. Seed and mince the jalapeño if using.
  5. In a medium mixing bowl, combine black beans, corn, tomatoes, bell pepper, red onion, and jalapeño. Toss gently to blend.
  6. Add chopped cilantro and, if using, fold in diced avocado carefully to avoid mashing.
  7. In a small bowl, whisk together olive oil, lime juice, ground cumin, salt, and pepper. Adjust seasoning to taste.
  8. Pour the dressing over the bean and veggie mixture and toss gently until evenly coated.
  9. Cover and refrigerate for 15 to 30 minutes to let flavors meld. Serve chilled or at room temperature.
