These fresh spring pinwheel sandwiches feature a creamy ham filling combined with crisp veggies wrapped in soft flour tortillas, perfect for quick lunches or casual gatherings.

Ingredients

Scale
  • 4 large flour tortillas (10-inch diameter)
  • 8 oz (225 g) cream cheese, softened
  • 2 tablespoons mayonnaise
  • 1 teaspoon Dijon mustard
  • 8 oz (225 g) deli ham, thinly sliced
  • 1 cup (100 g) shredded cheddar cheese
  • 1 cup (30 g) fresh spinach leaves, packed
  • 1 small red bell pepper, thinly sliced
  • 2 stalks green onions, finely chopped
  • 2 tablespoons fresh chives or parsley, chopped (optional)
  • Salt and freshly cracked black pepper, to taste

Instructions

  1. Soften the cream cheese by letting it sit at room temperature for 20-30 minutes until spreadable.
  2. In a mixing bowl, combine the softened cream cheese, mayonnaise, and Dijon mustard. Stir until smooth and fully incorporated.
  3. Fold in the chopped green onions, fresh chives or parsley, salt, and black pepper. Mix gently to distribute evenly.
  4. Thinly slice the red bell pepper and wash and dry the spinach leaves. Lay out the deli ham slices on a clean surface.
  5. Lay a tortilla flat and spread a generous, even layer of the creamy ham filling over it, leaving about a ½ inch border at the edges.
  6. Arrange ham slices evenly over the filling, then sprinkle shredded cheddar cheese, spinach leaves, and red bell pepper slices on top.
  7. Roll the tortilla tightly into a log shape. Wrap it in plastic wrap or parchment paper and refrigerate for at least 30 minutes to firm up.
  8. Remove from the fridge, unwrap, and slice the roll into 1-inch thick rounds using a sharp knife. Arrange on a serving platter.

Notes

Chill the rolled tortillas for at least 30 minutes before slicing to ensure clean cuts and firm pinwheels. Use a sharp knife and wipe the blade between cuts for best results. For gluten-free, use gluten-free wraps or large lettuce leaves. For dairy-free, substitute vegan cream cheese and plant-based cheese. Variations include swapping ham for smoked turkey, roast chicken, or vegetarian options.
