  • 1 lb (450 g) ground beef (80/20 lean-to-fat ratio preferred)
  • 1 medium yellow onion, diced
  • 3 garlic cloves, minced
  • 1 can (15 oz / 425 g) black beans, drained and rinsed
  • 1 can (14.5 oz / 411 g) fire-roasted diced tomatoes
  • 1 can (8 oz / 227 g) tomato sauce
  • 4 cups (960 ml) beef broth
  • 1 cup (150 g) frozen corn kernels
  • 2 tbsp taco seasoning
  • 1 tsp chili powder
  • 1 tsp cumin
  • Salt and pepper to taste
  • Optional toppings: shredded cheddar cheese, sour cream, sliced jalapeños, fresh cilantro, crushed tortilla chips

Instructions

  1. Heat a large heavy-bottomed pot over medium-high heat and add the ground beef. Break it apart and cook for 6–8 minutes until browned and no pink remains. Drain excess fat if needed.
  2. Add diced onion to the beef and cook for 3–4 minutes until softened and translucent. Stir in minced garlic and cook for 30 seconds until fragrant.
  3. Sprinkle in taco seasoning, chili powder, cumin, salt, and pepper. Stir well and let the spices toast for about a minute.
  4. Pour in fire-roasted diced tomatoes, tomato sauce, and beef broth. Stir in black beans and frozen corn. Mix everything well.
  5. Bring the mixture to a boil, then reduce heat to low and cover. Simmer gently for 25–30 minutes, stirring occasionally. Add broth or water if soup becomes too thick.
  6. Taste and adjust seasoning as needed before serving.
  7. Ladle soup into bowls and top with shredded cheddar, sour cream, fresh cilantro, and crushed tortilla chips if desired.

Notes

Brown the beef thoroughly to develop rich flavor. Drain excess fat to avoid greasy soup. Toast spices in the hot mixture to enhance aroma. Simmer gently to prevent scorching. Adjust seasoning last to balance flavors. Soup reheats well and can be frozen for up to 3 months.
