Sweet honey melts over tender, lightly caramelized carrots with a fresh sprinkle of parsley, creating a quick and easy side dish perfect for any occasion.

  • 1 pound (450g) carrots, peeled and cut into uniform sticks or rounds
  • 2 tablespoons honey (mild, runny honey like clover or wildflower)
  • 2 tablespoons unsalted butter, softened
  • 2 tablespoons fresh parsley, finely chopped (Italian flat-leaf parsley recommended)
  • ½ teaspoon salt, or to taste
  • ¼ teaspoon freshly cracked black pepper (optional)
  • ¼ cup (60ml) water

Instructions

  1. Peel and cut 1 pound (450g) of carrots into uniform sticks or rounds about ½ inch thick.
  2. Place a medium skillet over medium heat and add 2 tablespoons of unsalted butter. Let it melt gently without browning.
  3. Toss the carrots into the melted butter, stir to coat, then pour in ¼ cup (60ml) of water. Cover the pan with a lid to steam the carrots.
  4. Let the carrots steam for about 6–8 minutes, stirring halfway through, until fork-tender but still holding shape. Add more water if it evaporates too fast.
  5. Remove the lid, pour in 2 tablespoons of honey, sprinkle ½ teaspoon salt and ¼ teaspoon cracked black pepper (if using). Stir gently to glaze the carrots evenly.
  6. Turn the heat up to medium-high and cook uncovered for another 2–3 minutes until the honey thickens and coats the carrots with a shiny glaze. Be careful not to burn the honey.
  7. Remove the pan from heat and sprinkle 2 tablespoons of finely chopped fresh parsley over the carrots. Toss gently to combine.
  8. Transfer to a serving dish and serve warm immediately.

Notes

Do not overcook the carrots to avoid mushiness; use a fork to test tenderness. Add honey on medium heat to prevent burning. Add fresh parsley off the heat to keep it bright and fresh. For a dairy-free version, substitute butter with olive oil or vegan butter. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days and reheated gently.
