  • 12 ounces (340 g) semi-sweet or dark chocolate
  • 4 ounces (115 g) white chocolate (optional, for drizzling or decoration)
  • Wooden skewers or lollipop sticks
  • Styrofoam cone or floral foam base, about 6-8 inches tall
  • Wax or parchment paper
  • Optional garnishes: crushed nuts, shredded coconut, edible gold dust

Instructions

  1. Gently wash about 2 pounds (900 g) of fresh strawberries and pat completely dry with paper towels, leaving the green leafy tops intact.
  2. Chop 12 ounces (340 g) of semi-sweet or dark chocolate into small pieces. Melt the chocolate gently using a double boiler or microwave in 30-second intervals, stirring until smooth and glossy.
  3. Hold a strawberry by the leafy top and dip it into the melted chocolate, swirling to coat evenly. Let excess drip back into the bowl. Place the dipped berry on wax paper to set. Optionally sprinkle crushed nuts or coconut onto the wet chocolate. Repeat for all strawberries.
  4. If using, melt 4 ounces (115 g) of white chocolate similarly. Drizzle it over the set dark chocolate strawberries using a spoon or piping bag for decoration. Let cool completely.
  5. Insert wooden skewers or lollipop sticks into each dipped strawberry carefully. Starting from the bottom of the styrofoam cone, poke the skewers in evenly spaced rows, layering upward to create a full, round floral effect.
  6. Fill any holes with smaller strawberries or optional garnishes. Chill the entire tower in the fridge for 30 minutes to firm up the chocolate and keep the bouquet fresh until serving.

Notes

Keep strawberries completely dry before dipping to prevent chocolate from seizing. Work in small batches to keep chocolate fluid. Use a damp cloth to wipe hands between dipping to avoid drips. Refrigerate dipped strawberries uncovered for 10 minutes before assembly for a shinier finish. Store leftovers covered in the fridge up to 2 days; avoid freezing.
