  • 4 large lobster tails, thawed if frozen
  • 1/2 cup (115g) unsalted butter, softened
  • 4 cloves garlic, minced
  • 2 tbsp chopped fresh parsley
  • 1 tbsp chopped fresh thyme
  • 2 tbsp freshly squeezed lemon juice
  • 1 tsp lemon zest
  • Salt and freshly ground black pepper, to taste
  • 1 tbsp olive oil
  • Optional pinch of red pepper flakes
  • For the lemon sauce:
  • 2 tbsp butter, melted
  • 1 tbsp additional lemon juice
  • 1 tsp honey or maple syrup
  • 1 tsp chopped fresh dill or tarragon (optional)

Instructions

  1. Rinse the lobster tails under cold water and pat dry with paper towels. Using sharp kitchen scissors or a chef’s knife, carefully cut down the top of the shell towards the tail, stopping before the fin. Gently pry open the shell and lift the meat, resting it on top of the shell without detaching it completely to create a butterflied effect. (About 10 minutes)
  2. In a mixing bowl, combine the softened unsalted butter, minced garlic, chopped parsley, thyme, lemon zest, salt, pepper, and optional red pepper flakes. Mix thoroughly until fragrant and well blended. (5 minutes)
  3. Lightly brush the lobster meat and shells with olive oil to prevent sticking. Spread a generous layer of the garlic herb butter over the lobster meat, reserving some butter for basting during grilling. (5 minutes)
  4. Preheat the grill to medium-high heat, around 400°F (204°C). Ensure the grates are clean and well-oiled. (5 minutes)
  5. Place the lobster tails meat side down on the grill for about 3-4 minutes to get grill marks. Flip carefully and baste with more garlic herb butter. Grill meat side up for another 4-5 minutes until the lobster meat is opaque and firm to the touch. Use a meat thermometer to check for 140°F (60°C) if desired. Avoid overcooking. (10 minutes)
  6. While grilling, melt butter in a small saucepan or microwave-safe bowl. Stir in fresh lemon juice, honey, and chopped fresh dill or tarragon if using. Taste and adjust sweetness or acidity as needed. (5 minutes)
  7. Remove lobster tails from the grill, spoon the zesty lemon sauce over each tail, and garnish with extra fresh parsley if desired. Serve immediately. (2 minutes)

Butterfly the lobster tails for even cooking and better presentation. Use fresh garlic and herbs for best flavor. Control grill heat to avoid burning butter. Baste often to keep lobster moist.
