A quick and easy microwave mug brownie with a gooey caramel center, perfect for a solo indulgent treat ready in about five minutes.

Ingredients

Scale
  • 4 tablespoons (30 g) all-purpose flour
  • 2 tablespoons (15 g) unsweetened cocoa powder
  • 3 tablespoons (38 g) granulated sugar
  • A pinch of salt
  • 1/8 teaspoon baking powder
  • 3 tablespoons (45 ml) milk (whole or 2%, dairy-free options like almond milk work)
  • 2 tablespoons (30 ml) vegetable oil
  • 1/4 teaspoon vanilla extract
  • 1 tablespoon (15 ml) caramel sauce (store-bought or homemade)

Instructions

  1. In your microwave-safe mug, whisk together the flour, cocoa powder, sugar, salt, and baking powder until smooth, about 1 minute.
  2. Add milk, vegetable oil, and vanilla extract to the mug and stir until fully combined and smooth, about 1 to 2 minutes. Batter should be thick but pourable.
  3. Spoon 1 tablespoon of caramel sauce into the center of the batter without stirring it in, gently pushing it down to nestle in the middle.
  4. Microwave on high for 45 to 60 seconds (about 600 watts) until the edges look set but the center is still slightly soft and fudgy. Start with 45 seconds and add 10-second increments if needed.
  5. Let the mug brownie rest for 1 to 2 minutes before eating to allow the caramel to thicken slightly.

Notes

Use a sturdy ceramic mug for even cooking and warmth retention. Start with 45 seconds microwave time and add increments to avoid overcooking. Place mug on a microwave-safe plate to catch any caramel drips. For a crispier top, microwave for 30 seconds then use grill/broil function for 10 seconds if available. Substitute coconut oil for vegetable oil for a tropical note. Almond flour can be used for gluten-free version but texture will differ.
