A fresh and lively cocktail combining the sweetness of peaches, the warmth of bourbon, the zing of ginger beer, and the herbal aroma of basil. Perfect for summer gatherings and easy to make in under 10 minutes.

  • 2 medium ripe peaches, sliced into wedges
  • 810 fresh basil leaves, plus extra for garnish
  • 2 ounces bourbon
  • 46 ounces chilled ginger beer
  • ½ ounce fresh lime juice (about half a lime)
  • ½ ounce simple syrup (optional)
  • Ice cubes

Instructions

  1. Wash and slice 2 medium ripe peaches into wedges. Set aside a few slices for garnish.
  2. In a mixing glass, add 4-5 peach wedges and 8-10 fresh basil leaves. Gently muddle to bruise the basil and release juices from the peaches without pulverizing.
  3. Pour in 2 ounces bourbon, ½ ounce fresh lime juice, and ½ ounce simple syrup if using. Fill the glass with ice cubes to the top.
  4. Shake vigorously for 10-15 seconds if using a shaker, or stir thoroughly for about 30 seconds if not.
  5. Strain the mixture into a highball glass filled with fresh ice, or skip straining for a rustic presentation.
  6. Gently pour 4-6 ounces chilled ginger beer over the cocktail and give a light stir to combine.
  7. Garnish with a few peach slices and a sprig of basil. Serve immediately.

Notes

Do not over-muddle basil to avoid bitterness. Adjust simple syrup based on sweetness of peaches and ginger beer. Chill glass before serving to keep cocktail cool longer. Frozen peaches can be used if fresh are out of season. For a non-alcoholic version, omit bourbon and increase ginger beer and lime juice slightly.
