Savory Bacon-Wrapped Meatloaf with Brown Sugar Glaze

A quick and easy meatloaf wrapped in smoky bacon and topped with a sweet brown sugar glaze, perfect for comforting weeknight dinners.

  • 1 ½ pounds (680 g) ground beef (80/20 preferred)
  • 1 cup (90 g) breadcrumbs (plain or seasoned)
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 large egg, beaten
  • ½ cup (120 ml) milk (whole or 2%, room temperature)
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon dried thyme or Italian seasoning (optional)
  • 1012 strips thick-cut bacon (center-cut preferred)
  • ½ cup (100 g) brown sugar, packed (light or dark)
  • 2 tablespoons Dijon mustard
  • 1 tablespoon apple cider vinegar
  • Optional: pinch of cayenne pepper

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, combine ground beef, breadcrumbs, chopped onion, minced garlic, beaten egg, and milk. Add Worcestershire sauce, salt, pepper, and dried thyme or Italian seasoning if using. Mix gently until just combined.
  3. Transfer mixture to a 9×5 inch loaf pan, pressing down lightly to form an even loaf shape.
  4. Lay bacon strips over the top of the meatloaf, tucking ends down the sides to cover as much surface as possible.
  5. In a small bowl, whisk together brown sugar, Dijon mustard, apple cider vinegar, and cayenne pepper if using until smooth and slightly thick.
  6. Brush half of the glaze over the bacon-covered meatloaf evenly.
  7. Place meatloaf on a baking sheet and bake for 45 minutes.
  8. Brush remaining glaze on top and bake for an additional 15 minutes or until internal temperature reaches 160°F (71°C).
  9. Remove from oven and let rest for 10 minutes before slicing.
  10. Optional: Broil for 2-3 minutes at the end for extra crispy bacon, watching carefully to avoid burning.

Notes

Do not overmix the meat mixture to keep the meatloaf tender. Use room temperature milk and eggs for better blending. Overlap bacon strips to hold moisture and prevent glaze leakage. Tent with foil if glaze caramelizes too quickly. Rest meatloaf after baking for juiciness. Broil briefly for crispier bacon if desired.
