  • 12 slices (about 8 ounces / 225 g) thin-cut bacon (Oscar Mayer or Wright Brand recommended)
  • ½ cup (100 g) packed brown sugar (light or dark)
  • 1 tablespoon mustard (Dijon or yellow)
  • 1 teaspoon Worcestershire sauce
  • ½ teaspoon garlic powder
  • Freshly ground black pepper, to taste
  • Optional: red pepper flakes for heat

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, combine ½ cup packed brown sugar, 1 tablespoon mustard, 1 teaspoon Worcestershire sauce, ½ teaspoon garlic powder, and a pinch of freshly ground black pepper. Stir until smooth and well blended.
  3. Cut each slice of bacon in half crosswise. Wrap each little smokie with a half slice of bacon, overlapping the ends slightly to hold. Use a toothpick if needed to secure.
  4. Line a rimmed baking sheet with parchment paper or aluminum foil. Place the wrapped smokies seam side down on the sheet.
  5. Brush each bacon-wrapped smokie generously with the brown sugar glaze using a pastry brush or spoon.
  6. Bake for 20-25 minutes, flipping halfway through and brushing again with glaze. The bacon should be crispy and the glaze sticky but not burnt. Watch closely towards the end.
  7. Let the smokies rest on the tray for 5 minutes before serving to allow the glaze to set.
